Instructions
- Remove the membrane from the back of the ribs.
- Mix brown sugar, smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper. Coat ribs generously.
- Preheat smoker to 225°F with apple wood chips.
- Smoke ribs uncovered for 3 hours.
- Make the glaze: combine chipotle peppers, honey, ketchup, apple cider vinegar, and Worcestershire in a saucepan. Simmer 10 minutes.
- Wrap ribs tightly in foil with a splash of apple juice. Return to smoker for 2 hours.
- Unwrap ribs, brush generously with glaze, and smoke uncovered for 1 more hour.
- Rest 10 minutes before slicing between bones.
