Honey Chipotle Baby Back Ribs

Fall-off-the-bone baby back ribs glazed with a smoky honey-chipotle sauce. The 3-2-1 method gives you perfectly tender meat every time — three hours of smoke, two hours wrapped, one hour sauced.

Instructions

  1. Remove the membrane from the back of the ribs.
  2. Mix brown sugar, smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper. Coat ribs generously.
  3. Preheat smoker to 225°F with apple wood chips.
  4. Smoke ribs uncovered for 3 hours.
  5. Make the glaze: combine chipotle peppers, honey, ketchup, apple cider vinegar, and Worcestershire in a saucepan. Simmer 10 minutes.
  6. Wrap ribs tightly in foil with a splash of apple juice. Return to smoker for 2 hours.
  7. Unwrap ribs, brush generously with glaze, and smoke uncovered for 1 more hour.
  8. Rest 10 minutes before slicing between bones.
